Scotch Egg Recipe

Ingredients:
6 hard-boiled eggs, well chilled (i try to cook them to just past soft boiled stage, then stick them in the coldest part of the fridge to firm up)
1 pound good quality sausage meat (i used ground turkey meat, seasoned with sage, white pepper, salt and a tiny bit of maple syrup)
1/2 cup AP flour
1-2 eggs, beaten
3/4 cup panko-style bread crumbs
Vegetable oil for frying

Directions:
peel eggs; divide sausage into 6 portions.
roll each egg in flour then press and shape a portion of the sausage around each egg.
dip sausage-wrapped eggs into beaten egg and roll in panko.
heat oil to 350˚F .
cook each egg for 4-5 minutes (longer if shallow frying–constantly turn the eggs around for best results) or until sausage is cooked and browned.

Can be served cold

The advertisement for this LSU tailgating contest confuses me:

LSU has an official team hot sauce? Did Crystal outbid Tabasco or were they already affiliated with Tulane?

I love deviled eggs plain and simple. And really the only problem with them is the look you get when you put four of them on your plate.  Turns out that it’s considered “appropriate” to leave some for others.  Hogwash!  To avoid that problem DeviledEggs.com has a recipe that should satisfy your entire tailgate.  All 50 of those drunken rebel rousers.  Of course, I can eat 50 deviled eggs by myself.

DEVILED EGG RECIPE FOR 50

1 cup Fat free Mayonnaise
5 TBSP Dijon Mustard
1 4oz Can Deviled Ham
2 Finely Chopped Scallions
2 Finely chopped Stacks of Celery
1 TSP Celery Salt (Deviled ham has salt already in it, so do not over do salt)
2 TSP Dill Weed
1 Gallon Freezer bag
Garnish:
1 can of whole Olives
5 strips of bacon cooked and crumbled
Paprika

Place eggs underneath the top of the water, bring to a boil, over Med-High heat. When the water comes to a boil, cook eggs for 10 minutes and remove from heat, but do not remove them from hot water for another 10-15 minutes (This reduces the green gray haze to the outside of the yoke). Run under cold water and peel.

Cut eggs in half lengthwise. Remove yokes, and place in Medium Bowl, and mash up with a fork. Add Celery Salt, Dill Weed, Deviled Ham, Mayonnaise, Mustard, Finely chopped Celery and Scallions Mix well and place in 1 gallon freezer bag. Cut one end of freezer bag for dispensing mixture in egg shells.

Slice Olives and place on top, sprinkle paprika, and crumbled Bacon. Refrigerate until served.

Gear Review: Quik Shade S233 Tent

Update: We originally gave this tent a favorable review shortly after buying it. Unfortunately, this tent is just plain crappy. The frame broke, the side awnings make it a disaster in the wind, it doesn’t fit in it’s bag, and it’s rather difficult to put up. In retrospect we’ve switched to using two 8×8 EZUP tents. They are easy to carry, fit in the trunk of a sedan, go up in a minute with two to three people, and if they break it only costs about $80 to replace it next season.

We decided to try out the Quick Shade S233 Summit with Double Awnings because of it’s unique design. The double awnings provide more shade and as a result less glare on our tv. The awnings are easy to adjust and have four different set positions. The other main benefit of this tent is that the design doesn’t have any low hanging bars on the inside of the canopy. So bumping your head is not an issue. I would say that the middle of the tent has about an 8 foot clearance. Supposedly the tiered “pagoda” roofing allows for hot air to leave the area quicker but I’m not really buying it. The listed price at Dick’s Sporting Goods was $250.

The initial set up of the tent required some reading of the instructions but it wasn’t overly difficult. On a week to week basis you do have to remove side and bottom poles for each awning but that takes about 5 minutes. Overall the structure seems to be a little bit less sturdy then other tents I’ve used but we had no major problems. The main problem arrives when you try and pack the tent back into it’s carrying bag. The basic frame fits in fine but the extra fabric from the awning has no where to go. So you have to spend an extra $20 or so on a in the 50X30 range.

Pros: side awnings, head room clearance
Cons: too small of a carrying case, weekly setup, not currently available with team logos or colors

Decision: The Drunken Tailgate approves. This tent basically gives you the coverage of two tents despite packing up in the same size as a standard EZ UP tent.
